Good news for fish lovers! While the strict catch quota for traditional fish species are resulting in scarcity and higher prices, there is Cobia: a tasty and attractively priced alternative. Its white and firm though succulent meat is reminiscent of cod or halibut and can be prepared in many ways. You can enjoy it poached, baked, pan seared, grilled or raw, e.g. in Sushi, Sashimi or Ceviche.
